A family favorite, but we save it for special occasions. It's most often requested by my cousins.

White chicken for 8-10 people cut into small pieces
1 can cream of chicken soup
1/4 cup water
8 ounces sour cream
8 ounces Monterey jack cheese (grated)
3 tsp. poppy seeds
1 1/2 cups ritz crackers (crushed)
1 1/2 sticks margarine
Boil chicken in seasoned water (salt, pepper, etc.) for 10-20 minutes. Place chicken in a 9 x 13 casserole dish. Heat soup and water and add sour cream Mix into chicken. Mix grated cheese with poppyseed and sprinkle over chicken (you can do this ahead and refrigerate...this is the point you would freeze it at). Mix crushed crackers with margarine and sprinkle over chicken (add just before baking). Bake at 350 degrees for 30 minutes (would take longer if ref. or frozen).
