Boil peeled cubed potatoes (I use about 2-3lbs) with 1 diced onion and salt and pepper until potatoes are tender but not overcooked. Then add 1 pint half and half (I don't add this if I don't have it, it's fine without it) about 1-2 quarts whole milk depending on how soupy you want it. We like it soupy, some people like it thicker. You can also mix a little flour with some of the hot soup and add it back to the soup for an even thicker soup. Add graded cheese & crumbled bacon to the soup and I usually have some sour cream and chives on the side to mix in. You can leave all these items on the side if you want and just let everyone build their own soup.
Salt and pepper real good. My dh likes a little hot sauce in his. I serve with Saltine crackers.
