Noodles Chicken Divan
1 T butter or margarine
1 medium bell pepper, chopped
1 small onion, chopped
4 C fresh broccoli (i bunch) or may use 1 small
box frozen
1 (14.5) oz. can chicken broth
1 C light cream (or fat free half/half)
3 C medium noodles (6 oz.)
1 1/2 C chopped cooked chicken
In a large skillet, melt butter over medium heat. Add pepper, onion, and broccoli. Cook, stirring occasionally for 5 minutes.
Stir in chicken broth, cream, noodles, and chicken. Heat to boiling. Reduce heat to low. Cover and simmer over low heat for app. 25-30 minutes or until noodles are tender.
Chicken Stew
1 can (14.5 oz.) chicken broth
1 can (6oz.) tomato paste
1 lb. chicken, cut into 1" cubes
2 C potatoes, peeled and cubed
1 small onion, chopped
1 celery stalk, sliced
2 medium carrots, sliced
1/2 tsp. paprika
1/4 tsp. pepper
1/4 tsp. dried thyme
1-1 1/2 tsp. water
1 Tbsp. flour
In a crock pot combine the chicken broth and tomato paste. Add next eight ingredients and stir to mix well. Cover and cook on high heat for 3 1/2-4 hours, or on low for 7-8 hours. Mix water and cornstarch in small bowl. Stir in stew. Cook, covered for 30 minutes, or until thickened.
