We're fixin' to have our hottest week so far here (not nearly as hot as my southern sisters have had... but it'll feel that way to us!), and my kids have soccer camps to boot! I need some "light" dinners. We do not have central air, so if I can avoid turning on the oven or even the stove that would be terrific!

salads and sandwiches always come to mind... but any other kid-friendly type easy no-cook meals your family likes???
