If I do a salad as a main meal, I usually make a salad bar and let everyone build their own. I include stuff I wouldn't put in a regular salad, like boiled eggs, chopped ham if I have it, nuts, raisins, left-over vegetables, several kinds of lettuce if possible. Oh, and kidney beans - good protein!

Crock-pot meals are good if it's too hot to turn on the oven - baked beans, for example, with hot dogs (microwave or grill them)

Can you cook ahead before it gets too hot, or do it at night, and then use the microwave to reheat some things?

I'd probably be serving a lot of sandwiches and popsicles.
