Birgit Oven roasted potatoes - a family favorite!...

Wash about 2 lbs potatoes, cut into largish dice or pieces (I leave the peels on). In a bowl, toss with 1 onion cut into wedges, 2 Tbsp olive oil, and whatever seasoning you want. (Just salt and pepper is okay; we always use Northwood Seasoning Mix from Penzeys, but Italian or Steakhouse spices work well, too.)

Spread in an even layer on a cookie sheet (not insulated.)

Roast at 400 degrees for 35 - 40 minutes. You can stir/turn them once about 25 minutes in (I usually don't bother.)
