3 large potatoes, peeled and sliced 1/4 in thick
1-2 cans or 1 bag of frozen corn
14 oz can diced tomatoes
1 pound bulk breakfast sausage, broken up
6 eggs beaten with 1/2 cup milk
2 cups shredded cheddar cheese
1-2 onions sliced
salt and pepper, about 1 tsp each
1 tsp garlic powder
1 tsp parsley
Heat oven to 350. Layer in a casserole, 9 x 13 inch, that you sprayed with cooking spray potatoes, corn, tomatoes, sausage,seasoning, then pour eggs over the top. Sprinkle cheese evenly. Cover with foil and bake at least 1 hour until potatoes are soft, meat is done and eggs are cooked.
You can omit any veggies or change out seasonings or even use Italian sweet sausage. This is very versatile.
