2 T olive oil
salt, pepper
3 large cloves garlic
3 large zucchini
8 oz fresh whole mushrooms - halved
1 sweet onion in 1/4" slices
2 ears corn
sherry vinaigrette
In large pan, mix oil with salt, pepper and garlic. Put vegetables in pan and coat with oil. Heave oven to 400 and fire up the grill. Grill zucchini till bottoms are slightly browned. Return to pan with grilled side up and put in oven for 10 minutes. Grill mushrooms, onions and corn on all sides but not till cooked through. Slice off corn kernels, combine all vegetables and pour over dressing. Serve at once or chill no more than 1 hour.
Sherry vinaigrette: combine
1 t Dijon,
1/4 t sugar
1 T sherry
1 T vinegar
2 T olive oil
salt and pepper to taste. You can also use this to marinate tuna before grilling.
