cellomom Red Velvet Cake and Frosting

(this is from my mom)

1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 T unsweetened cocoa
2 ounces red food coloring
2 1/2 c. flour
1/4 t. salt
1 c. buttermilk
1 T vinegar
1 t. baking soda
1 t. vanilla extract

Cream sugar and shortening; Add eggs; Make a paste of coloring and cocoa then add 2 oz of water (use coloring bottles); Add to cream mixture; Add alternating flour, salt and buttermilk; add 1 tsp vanilla; Mix soda in vinegar and fold into mix. Make into 4 thin layers and bake at 350-375 for 10-12 minutes. Do not overbake!

Frosting:
Make paste of 2T cornstarch and 1 c. cold water. Cook until thick. When thick remove from heat and let cool completely

Whip 2 sticks soft butter - add cooled cooked cornstarch and beat.

Then add 1 1/2 c. sugar (maybe less...1 1/4 c) a little at a time. Then add 1 tsp. vanilla

Will turn to whipped cream texture and looks.

--not necessary to keep in refrigerator.

(we just had this a couple of months ago. Yummy!)
