I'm linking the recipe, but I'll type it out here, even though it's really complicated.
16 oz can pumpkin
1 spice cake mix
Mix them together. Makes 12 muffins. Bake at 350 for 20ish minutes.
The batter is very thick. When I put it in the muffin tins, it held the shape that it was dropped in, and I remembered seeing weird peaks on top of the muffins in the picture on the link, so I got a cup of water and dipped two fingers in it and pressed the batter down to smooth out the top. But I'm weird like that.
I'm buying more pumpkin and cake mix at the store soon! And I have to check the nutrition labels of them both, because I'm thinking these can't be too bad for you, can they? I don't know how bad cake mix is for you by itself, since you're not adding any oil or anything else.
