One of Tom's comfort foods. Makes the whole house smell soooo great. I would really like to figure out how to put it in the crock pot, but don't know if I need to add more flour, use a different thickener (I have quick-cooking tapioca on hand for other crock-pot recipes), or when to put it in the crock pot.
Delicious Chicken Curry
1/2 c butter
3 lg onions chopped
3 lg cooking apples, chopped (unpeeled)
3 cloves minced garlic
2-1/2 Tb curry powder
2 tsp salt
1/4 tsp pepper
1 Tb coconut
3 Tb raisins
1 Tb lemon juice
1/3 c flour
4 chicken breast halves, skinned, boned, and cubed
1-1/2 c chicken broth
1/3 c heavy cream
In large skillet or dutch oven melt butter. Cook next 9 ingredients until onion is tender. Add dredged chicken and flour to pan, cook 5 min. Add broth and cream, stir well. Reduce heat and cook at least an hour. Serve over cooked rice.
