Oatmeal Packet Pancakes
*Makes 8 servings, about 2 medium pancakes each
This recipe was adapted from one I found on Allrecipes.com
2 eggs
2 Tbsp. vegetable oil or melted butter
1 3/4 cup milk
2 cups flour
3 tsp. baking powder
1 Tbsp. sugar, brown or white
2 packets instant oatmeal, any flavor (maple brown sugar, apple cinnamon, banana, etc.)
1 tsp. cinnamon (optional)
1 cup mashed banana or applesauce (coordinate this with the flavor of oatmeal you like! I do mashed banana w/maple brown sugar and add the cinnamon, too.)
Whisk together egg, oil, and milk until smooth. Add mashed banana or applesauce. Add oatmeal packets and allow to sit for a few minutes so that the oats soften.
Mix together flour, baking powder, sugar, and cinnamon; add to liquid ingredients and stir just until combined. (*Add up to 1/4 more milk if the consistency seems too thick, depending on whether or not you use applesauce which can be runny.)
Pour batter, 1/4-1/3 cup full per pancake, onto lightly oiled griddle or frying pan and brown on both sides.
