Lea Hot Tuna Sandwich...adapted this *slightly* from a book by Jillian Michaels...

Hot Tuna Sandwich

- 1 to 2 tsp coconut oil
- 1/8 cup chopped onion
- ¼ TBS minced garlic
-Salt to taste
-1 can tuna in olive oil (do NOT drain)
-¼ tsp crushed red pepper
-1 TBS whole grain mustard
-2 slices whole grain bread

Melt coconut oil in cast iron skillet over medium-high heat.
Add onion, garlic & dash of salt. Stirring frequently, cook for 1 to 2 minutes.
Add the tuna and crushed red pepper. Mix completely with the onions and garlic. Cook, stirring often, until heated thoroughly.
Lightly toast bread.
Spread ½ TBS of mustard on each slice of bread.
Spoon the tuna mixture over each slice of toasted bread.

This was amazingly good! I think next time I make this, I'm gonna put some baby spinach on the sandwich too.
